定義： 白菜（學名：Brassicarapachinensis，異名Brassicacampestrischinensis或Brassicachinensis）是一種原產東亞的蔬菜，俗稱青菜（中國東北地區至華南地區）、油白菜等，與大白菜（結球白菜）是近親，同屬蕓薹一種，和西方的圓白菜也較近，同屬十字花科蕓薹屬。在香港在九十年代以前說到白菜專指小白菜，在香港另兩種可以叫白菜的蔬菜，圓白菜是叫椰菜，大白菜叫黃芽白。歷史白菜原產中國。在西安新石器時代半坡遺址中出土的一個陶罐里有白菜籽，有六千多年的歷史，依迄今為止的考古發現來看，它要比除稻谷外其他原產中國的糧食作物古遠。白菜古時稱“菘”，春秋戰國時期已有栽培，最早得名于漢代。南北朝時是中國南方最常食用的蔬菜之一。注：本名詞內容引自維基百科
